Mini Muffins


Ingredients: (quantities are sufficient for 12 muffins)
  • 150 g plain flour
  • 1 tbsp baking soda
  • 1 pinch of salt
  • 2 tbsp cocoa powder
  • 125 g soft margarine
  • 125 g caster sugar
  • 2 eggs
  • 75 g chocolate chopped into small pieces
  • Decoration: chocolate icing, sugar icing, chocolate chips, etc.


1. Preheat the oven to 180 °C/ 350 °F/ Gas 4.

2. Measure the butter sugar into a bowl add the eggs.

3. Whisk together using an electric hand whisk until light and fluffy.

4. Mix plain flour with baking soda and cocoa powder. Add it to the butter, sugar and egg mixture.

5. Beat using an electric hand whisk until combined.
Turn the small chocolate pieces in flour. Stir them carefully by hand into the dough.

6. Line the mini muffin tray with the silicone cases and spoon in the mixture until each one is about two thirds full.

7. Bake in the oven for 12 to 15 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool for a few minutes and then transfer to a wire rackt to cool completely.

8. Decorate: As you like it!
