Mini Cake


  • 150 g plain flour
  • 1 tbsp baking soda
  • 1 pinch of salt
  • 125 g soft margarine
  • 125 g caster sugar
  • 2 eggs
  • Decoration: Butter cream, chocolate icing, sugar icing, chocolate chips, etc.


1. Preheat the oven to 180 °C/ 350 °F/ Gas 4.

2. Measure the butter sugar into a bowl add the eggs. Whisk together using an electric hand whisk until light and fluffy.

3. Mix plain flour with baking soda. Add it to the butter, sugar and egg mixture.

4. Beat using an electric hand whisk until combined.

5. Place the cake tins on an baking tray. Brush them with margarine and pollinate with flour.

6. Wealth the cake tins using the spoon with the dough until two thirds full.

7. Bake in the oven for 12 to 15 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool for a few minutes and then transfer to a wire rackt to cool completely.

8. Decorate: As you like it!
