Mini Cake

 

Ingredients:
  • 150 g plain flour
  • 1 tbsp baking soda
  • 1 pinch of salt
  • 2 tbsp cocoa powder
  • 125 g soft margarine
  • 125 g caster sugar
  • 2 eggs
  • 75 g chocolate chopped into small pieces
  • Decoration: chocolate icing, sugar icing, chocolate chips, etc.

 

1.    Preheat the oven to 180 °C/ 350 °F/ Gas 4.

2.    Measure the butter sugar into a bowl add the eggs. Whisk together using an electric hand whisk until light and fluffy.

3.    Mix plain flour with baking soda and cocoa powder. Add it to the butter, sugar and egg mixture.

4.    Beat using an electric hand whisk until combined.

5.    Turn the small chocolate pieces in flour. Stir them carefully by hand into the dough.

6.    Place the cake tins on an baking tray. Brush them with margarine and pollinate with flour.

7.    Wealth the cake tins using the spoon with the dough until two thirds full.

8.    Bake in the oven for 12 to 15 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool for a few minutes and then transfer to a wire rackt to cool completely.

9.    Decorate: As you like it!

Biscuits

 

Ingredients:

200 g unsalted butter (room temperature)

100 g caster sugar

300 g plain flour

25 g corn flour

1 tsp vanilla extract

Decoration:

chocolate icing, sugar icing, chocolate chips, etc.

 

1.    Preheat the oven to 180 °C/ 350 °F/ Gas 4.

2.    Measure the butter and sugar into a bowl. Whisk together using an electric hand whisk until light and fluffy, add the vanilla.

3.    Mix plain flour with corn flour. Add it to the butter and sugar mixture.

4.    Using your hands, rub the mixture together and gently knead to form a firm dough.

5.    Put the dough in the fridge for one hour.

6.    Roll out (0,3-0,5 cm) on an floured working surface and stamp out into shapes using the cutters.

7.    Place them carefully on a baking sheet with baking paper slightly apart.

8.    Bake for 8-10 minutes until very lightly golden. Leave to cool.

9.    Decorate: As you like it!
